GENESIS

Salt of the Earth opened in June 2009 but the restaurant's roots stretch back to 2006 when Kevin Finn decided to create "something" on East Beancross Farm's former stable block and horse yard.

His concept of a family-run, family oriented establishment offering good food in a relaxed setting took two years to gain planning permission and during that time he was developing his ideas for the design, build and 'look' of the building as well as the cooking style and menu choices.

Researching and sourcing his management and construction team led to an amazing piece of good fortune and a radical decision.

 

Kevin discussed his plans with an old friend (who had been responsible for overseeing the construction of the Scottish Parliament building) resulting in his help and advice on the construction of Salt of the Earth. Armed with this help; drawing on his well-established relationship with design and marketing consultancy IDEAS (who created the restaurant's interior) and the support of local contractors, Kevin moved into a portacabin on the site six months prior to the restaurant opening and managed the entire project himself.

In his first foray into construction project management, Kevin and his team brought the building in under budget and on schedule, an achievement not often managed by the most highly experienced construction firms.
